Preparation steps

For the dough: Cut the apricots into small pieces and puree in a blender. Heat the milk. Mix the flour with yeast. Combine the egg, milk, oil and apricot and process until smooth, using a dough hook attachment on a hand mixer. Covered let rest for 30 minutes.

For the topping: Drain the canned apricots, catching the juice in a liquid measuring cup and add water to equal 400ml (approximately 1 3/4 cups). Combine the pudding powder with 6 tablespoons of the apricot juice and mix until smooth. Bring the rest of the juice to a boil, add the pudding powder mixture. Stir and boil again. Mix the quark with sugar, vanilla and egg. Add the pudding mixture to the quark mixture and stir.

Knead the dough briefly and roll out on a piece of parchment paper to fit a baking sheet. Lift the dough, using the parchment paper, onto the baking sheet. Press the dough with the palm of the hand to spread the dough to the edges of the baking sheet. Spread the pudding mixture on top and let rest for 15 minutes.

For the streusel: Mix the flour with oats, sugar and butter and knead to crumble. Place apricot slices on top of the filling and sprinkle with the streusel. Bake in a preheated oven at 190°C (approximately 375°F) on the middle rack for 35-45 minutes.
