125 grams Margarine
50 grams sugar
2 beaten eggs
15 milliliters hot water
50 grams Whole wheat flour
50 grams Pastry flour
1 packet Baking powder
125 grams Quark
1 tablespoon Sweetener
Orange juice (if desired)
5 Apricot (canned, unsweetened)

Preparation steps

Preheat oven to 180°C (approximately 350°F). Cream margarine and sugar. Add eggs and water and beat until foamy. Mix whole-wheat flour, pastry flour and baking powder together and add to the egg mixture. Divide the batter in half and place in 2 greased springform pans.

Bake cake layers 20 to 25 minutes. Let cool. For the filling, mix quark and sweetener until creamy with some orange juice (if desired). Unmold 1 cake layer and spread with the quark mixture.

Top with the apricot halves. Unmold remaining cake layer and put on top. Spread with the remaining quark mixture. Garnish with apricot slices and mint leaves.
