Quark and Vanilla Ice Cream
In a shallow metal pan, whisk together quark, vanilla bean seeds, sugar, eggnog and amaretto. Freeze 2 hours, stirring vigorously every so often to prevent large ice crystals from forming. Alternatively, process in an ice cream maker, according to manufacturer’s instructions.
Rinse fruit and pat dry.
To serve, place some of the fruit in 4 cones. Top with 4 semi-frozen scoops of vanilla ice cream. Place cones in paper holders and top with remaining fruit.
