Quark and Chocolate Dumplings
Drain the quark and squeeze using a kitchen towel. Mix the drained quark with sour cream, semolina flour, sugar, vanilla, egg yolks, cinnamon and 1 pinch of salt. Let the mixture rest for 15 minutes.
Cut the chocolate into pieces. Fry the breadcrumbs in a pan with butter until light brown. Transfer the breadcrumbs on a plate so they do not darken.
If the quark mixture is too soft, mix in a little semolina flour. Divide the quark mixture into portions, flatten each portion, stuff a piece of chocolate in the middle and shape into dumplings. Cook the dumplings in lightly salted boiling water until they float to the surface.
Take out the dumplings with a slotted spoon from the water and drain well. Roll the dumplings in the breadcrumbs and serve with cherry compote.
