100 grams Radish (with green tops)
2 tablespoons white balsamic vinegar
100 grams Wild garlic pesto
2 tablespoons olive oil

Preparation steps

1.

Cook the eggs about 6 minutes until hard boiled. Remove from heat, peel and halve.

Peel the shallot and finely chop. Rinse the radishes, put the green tops aside for the garnish and dice the radishes very small. Stir the diced radishes with the shallots, the vinegar, 1 tablespoon pesto and the oil and season with salt and pepper.

3.

Place the remaining pesto on spoons and place the quail eggs on top of the pesto. Distribute the radishes, with the dressing, equally among the spoons and serve garnished with radish leaves.
