Combine the white wine, water, crème de cassis, gomme syrup, and lemongrass in a saucepan and bring to the boil. Reduce to a simmer and add the pears to the liquor.
Poach for 50-60 minutes until tender.
Add the grapes and lemongrass leaves if using to the liquor 5 minutes before you remove the pears.
Arrange the pears on a serving plate and garnish with the grapes, lemongrass flowers and a little of the poaching liquor. Serve warm.
