200 grams Pumpkin (e.g. Hokkaido pumpkin)
1 cube fresh Yeast about 42 grams (approximately 1.5 ounces)
1 teaspoon sugar
500 grams Pastry flour
1 teaspoon salt
50 grams baking soda (Kaisernatron)
coarse-grained salt (to sprinkle)

Preparation steps

Cut the pumpkin flesh into cubes and cook until tender in a little water. Drain the water and puree the pumpkin. Mix the yeast with the teaspoon of sugar in a cup until it is a smooth liquid. Sift the flour into a bowl and make a well in the middle. Pour in the yeast and mix with a little of the surrounding flour. Cover with a cloth and let rise for 20 minutes in a warm place. Add the salt, the pumpkin puree and 50-100 ml (approximately 1.5-3 ounces) of water and knead into a smooth dough. Cover the bowl with a cloth and let rise for 1 hour in a warm place until the dough has doubled in size.

Preheat the oven to 200°C convection (approximately 400°F).

Submerge the baking soda in a pint of water and boil to dissolve. Knead the dough again vigorously and form round rolls. Dip the rolls into the baking soda water and then place on a parchment-lined baking sheet. Cut the rolls crosswise, sprinkle with salt and bake for 25 minutes. Let cool and remove to a wire rack to cool completely before serving.
