Preparation steps

1.

For the crust: Combine the flour, ground walnuts and cocoa powder, make a well in the center, arrange the butter around the edges and add the egg yolk, salt and sugar to the well. Using a butter knife or pastry blender, mix until crumbly, knead until smooth then cover with plastic wrap and chill for 30 minutes.

For the cheesecake: Cut the pumpkin flesh into cubes, partially cover with a little water, cover and simmer for about 20 minutes, until softened. Drain, let the steam evaporate, purée and let cool.

Whisk the eggs, sugar and cinnamon until creamy. Stir in the butter, pumpkin purée, quark and cornstarch.

Preheat the oven to 180°C (approximately 350°F) convection. Line a springform pan with parchment paper.

Roll out the dough on a lightly floured work surface and use to line the bottom of the springform pan. Fill with the cheesecake mixture, smooth the surface and bake for about 1 hour.

6.

Remove the cake from the oven and let cool in the mold. Release from the mold.

7.

To decorate: Warm the jam and spread over the cake. Knead the marzipan with the powdered sugar, roll out thinly and use to cover the cake. Sprinkle with chopped walnuts.

8.

To serve: Cut the cake into serving pieces and garnish with whipped cream, mint and caramel sauce.
