Puff Pastry Tart with Gooseberries
Line a baking tray with butter.
Roll out the puff pastry as needed and line the baking tray with it, pushing up a small edge. Rinse, trim and pat dry the gooseberries. Mix the gooseberries with the cornstarch and the vanilla sugar, and spread over the puff pastry in the baking tray. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for about 25 minutes until golden brown. Remove from oven and let cool.
For the cream, beat the cream with the vanilla and powdered sugar until stiff. Pour just before serving over the tart and serve cut into pieces.
