1 Puff pastry dough (frozen)
Pastry flour (for the work surface)
1 egg yolk
½ Cantaloupe
2 tablespoons Mint honey
12 slices Serrano ham

Preparation steps

Preheat oven to 200°C (approximately 400°F). Thaw puff pastry, roll out on a floured surface and cut into 10 x 10 cm (approximately 4 x 4-inch) squares. Place pastry squares on a baking sheet lined with parchment paper. Brush pastry with egg yolk and bake until golden-brown, 10-15 minutes. Remove, let cool and cut in half crosswise.

Halve melon, remove seeds, cut into slices and remove peel. In a pan, melt the honey. Add melon and toss briefly until coated. Lay 3 slices of melon and 3 slices of ham in alternating layers on half of the puff pastry squares. Top with the remaining half of puff pastry squares and serve sandwiches garnished with mint.
