Wholemeal puff pastry, wholemeal breadcrumbs, raisins and apples provide us with plenty of fiber. The intestine appreciates these ingredients, because digestion is stimulated and they keep us full for a long time. The swelling agent pectin from apples is a special dietary fiber, because it can calm an irritated intestine and, like other dietary fibers, bind existing harmful substances so that they can be excreted.

For the crust
1 packet Puff pastry dough (frozen, 14-16 oz.)
2 ounces soft butter
For the filling
36 ounces Apple
2 ounces breadcrumbs
3 ½ ounces grated almonds
2 teaspoons powdered sugar
2 tablespoons butter
3 tablespoons sugar
1 teaspoon cinnamon
2 ounces raisins
Vanilla sauce (for garnish)

Preparation steps

1.

Thaw shortcrust pastry, put shortcrust sheets together and brush each layer with a little butter. Thinly roll out shortcrust on a floured surface to form large rectangle and cut straight edges. Set aside remaining shortcrust for decoration.

Gently place shortcrust rectangle on a floured kitchen towel.

Mix almonds, powdered sugar and breadcrumbs and fry in pan with butter.

Peel apples and cut into small pieces. Mix apples with cinnamon and raisins and spread over shortcrust, leaving an open space around edge.

Carefully roll up strudel carefully using kitchen towel. Sprinkle with butter and top with balls of remaining shortcrust. Bake in hot oven at 180°C / 400°F for about 35 minutes.
