Pudding with Caramel
Simmer1 tablespoon sugar with water in a small pot.
Simmer until golden brown. Immediately pour into bottom of 4 ramekins and swirl until entire bottom of each ramekin is covered.
Mix sugar with egg yolks and whip until thick. Boil milk and cream, cool slightly and slowly stir into egg mixture.
Pour egg mixture through a sieve and then into ramekins. Fill a baking dish with hot water, add ramekins and bake in a preheated oven at 190°C (approximately 350°F) for 30 minutes. Cool. To serve, briefly dip bottoms of ramekins in hot water and then turn over onto dessert plates.
