Pudding Pecan Parfait
Place the chocolate rice cakes in a bag and crush with a rolling pin. Prepare the vanilla and mocha pudding according to the package instructions. Wet 8 glasses and pour a layer of each pudding, then fill with the rice cake crumbs. Press down firmly. Let cool and solidify before serving.
Meanwhile, melt the sugar in a pan over low heat. Add the honey and pecans. Simmer briefly, let cool slightly, then spoon over chilled dessert glasses before serving.
