For the prune filling
50 milliliters rum
50 milliliters Water
1 packet Vanilla sugar
200 grams Prune
For the pastry
200 grams Pastry flour
1 pinch Salt
1 Egg
50 milliliters lukewarm Water
2 tablespoons Vegetable oil
For the quark filling
125 grams Cornstarch
1 Egg
1 packet Instant pudding mix

50 grams melted Butter

Preparation steps

For the prune filling, mix rum, water and vanilla. Cut prunes into cubes and add to rum mixture. Cover and set aside. For the pastry, mix flour with salt, egg, water and oil. Knead into a smooth dough. Wrap in plastic wrap and let rest for 30 minutes at room temperature. For the quark filling, mix the quark with egg, sugar and pudding mix. Divide pastry in half. Roll out each half on a lightly floured tea towel first and then use the back of the hand to gently thin the dough from the center to a 50 x 30 cm (approximately 20 x 12 inch) sheet. Brush the dough with half the butter.

Divide the prune filling on two thirds of the pastry sheet, leaving 2 cm (3/4-inch) wide gaps. Spoon the quark filling into the gaps. Roll each strudel using the towel from the short side. Place the strudel on a parchment paper lined baking pan. Brush with the remaining butter. Bake in preheated 180°C (approximately 350°F) oven for about 40 minutes.
