- 2 cups fresh Spinach
- 2 cups Arugula
- 1 Tbsp lemon juice
- 1 bunch mixed Fresh herbs (e. g. rosemary, thyme, parsley, mint etc, chopped)
- 1 ¾ cups cream cheese
- 3 Tbsps cream (at least 30% fat)
- 8 slices Crispbread
- 16 slices Smoked ham
- 8 Radish
- 1 cup Mache Lettuce (lamb's lettuce)
- fresh Fresh herbs (to garnish)
Preparation steps
1.
Mix together the spinach, arugula, lemon juice, herbs, cream cheese, and the cream and puree well. Season with salt and ground black pepper.
2.
Spread the cream onto the crispbreads, roll up the ham and arrange on the crispbreads with the radishes.
3.
Garnish with the lettuce and the herbs and serve on a platter.
