Prosciutto and Herb Slices
This makes for a wonderfully nutritious and light summer or spring-time appetizer!
Serve with some crackers or a whole wheat baguette for easy serving and more filling portions.
- 2 cups fresh Spinach
- 2 cups Arugula
- 1 Tbsp lemon juice
- 1 bunch mixed Fresh herbs (e. g. rosemary, thyme, parsley, mint etc, chopped)
- 1 ¾ cups cream cheese
- 3 Tbsps cream (at least 30% fat)
- 8 slices Crispbread
- 16 slices Smoked ham
- 8 Radish
- 1 cup Mache Lettuce (lamb's lettuce)
- fresh Fresh herbs (to garnish)
Mix together the spinach, arugula, lemon juice, herbs, cream cheese, and the cream and puree well. Season with salt and ground black pepper.
