Ingredients

Preparation steps

1.

For the meat: Rinse and cook the day before. Pour water with white wine, spices and vegetables for cooking in a large pot. Add meat and ensure it is covered by water and simmer for 30 minutes. Allow to cool in the liquid.

For the vegetable sauce: Using 300ml (approximately 1 1/4 cup) of meat cooking liquid, bring to a boil, add diced vegetables and cook until soft in about 7 minutes.

Cut cold butter into small pieces, quickly stir into the hot broth and season with salt and pepper.

For the potatoes: Blanch potato cubes in boiling salted water for about 5 minutes. Drain and rinse with cold water. Just before serving, fry in hot butter for about 10-15 minutes until golden brown, and garnish with marjoram leaves

To serve cut meat into thin slices. Heat sauce and heat the slices for about 5 minutes. (the sauce should not boil!). Serve slices with potatoes on plates and garnish with chervil or chives, along with the sauce.
