1 ⅓ cupsshrimp ready cooked
1 bunchcilantro finely chopped
3 tablespoonsRicotta cheese
2 tablespoonsfreshly grated Parmesan cheese
3 tablespoonswhite balsamic vinegar
2 tablespoonsolive oil
salt
freshly ground peppers

Directions

1 Cook the penne in boiling, salted water according to the instructions on the packet until
2 al dente.
3 Mix together the ricotta cheese, balsamic vinegar and the olive oil and stir until smooth. Add the drained pasta, shrimps and coriander and season with salt and freshly milled pepper.
