Prawn and Mango Cocktail

- 1 large, ripe Mango (peeled and cubed)
- 1 small Red pepper (halved, seeds and interior white skin removed, cut into strips)
- 1 bunch Arugula (roughly chopped)
- 1 handful Bean sprout
- 12 prepared shrimp
- 2 garlic cloves (roughly chopped)
- 4 Tbsps olive oil
- 1 untreated Orange
- 3 Tbsps balsamic vinegar
Mix the mango, pepper, rocket and bean sprouts together.
Lightly fry the prawns and garlic together in 1 tbsp oil.
Grate the orange zest and then juice the orange. Add both to the prawns, remove from the heat and allow to rest.
Mix the balsamic vinegar with the rest of the oil, salt and pepper and mix in with the salad ingredients. Season to taste and serve in bowls with the orange-prawns on top.
