Prawn and Chilli Nooldes

King prawn (ready to cook, entrails removed, peeled up to tail)
- 1 stick
Lemongrass (cut in half lengthways)
- 1 teaspoon
- 2 tablespoons
light soy sauce
- 1 tablespoon
light Fish sauce
- 3 tablespoons
light sesame oil
red chile peppers (cut into strips)
scallions (cut into diagonal rings)

Cook the noodles according to the directions on the packet. Drain and cut into small pieces using scissors.
Place the prawns into a pot of simmering water with the lemongrass. Set aside and leave to steep for 3-4 min. Drain and leave to cool.
Mix together the sugar, lime juice, soy sauce, fish sauce and the oil. Stir in the noodles, prawns, chilli and the spring onions and arrange on plate. Serve garnished with coriander, kaffir lime leaves and chilli peppers.
