2 teaspoons vegetable oil
1 small onion (finely chopped)
1 small carrot (finely chopped)
1.333 cups lean Ground beef
1 tablespoon all-purpose flour
1 cup salt (low sodium)
1 cup canned tomatoes
1 teaspoon Worcestershire sauce
3.333 cups potatoes (peeled and chopped)
1 ⅔ cups Sweet potato (peeled and chopped)
1 tablespoon milk
1 tablespoon butter

Preparation steps

Heat the oil in a small pan and cook the onion and carrot for about 5 minutes until soft. Add the minced beef and cook for 2-3 minutes.

Stir in the flour and then add the stock. Bring to the boil, stirring. Add the tomatoes and the Worcestershire sauce. Cover and simmer for 15 minutes.

While the mince is cooking put the potatoes and sweet potato in a pan of water. Bring to the boil and cook for 10-15 until tender. Drain and mash with the butter and enough milk to mix to a creamy consistency.

Heat the oven to 190°C|170°C fan|375°F|gas 5.

Spoon the mince into two individual ovenproof dishes. Top with the mashed potato. Bake in the oven for 10-15 minutes until golden brown.
