- 700 grams starchy potatoes
- salt
- 2 Apple (such as Boskop)
- 2 Tbsps lemon juice
- 150 grams gherkins (jarred)
- 1 bunch Chives
- 400 grams Pickled herring (in oil)
- 5 Tbsps Mayonnaise
- 2 Tbsps Natural yogurt
- 2 Tbsps Sour cream
- freshly ground peppers
- sugar
Preparation steps

Rinse the potatoes and cook for about 25 minutes in boiling salted water. Drain, let evaporate and peel. Let cool completely.

Rinse the apples, quarter, remove the core, cut into small pieces and mix with 1 tablespoon lemon juice. Drain the gherkins and cut into bite-sized pieces.

Rinse the chives, shake dry and slice. Drain the herring well and also cut into small pieces.

Mix the mayonnaise with the yogurt, sour cream and the remaining lemon juice and season with salt, pepper and a pinch of sugar. Cut the potatoes into bite-sized pieces and mix with the fish, apples, gherkins and dressing. Serve on plates sprinkled with chopped chives.
