Ingredients

For the stewed plums
600 grams Plums
200 milliliters Apple juice
1 stalk Cinnamon
Vanilla sugar (to taste)
For the potato noodles
250 grams starchy Potatoes
250 Quark
1 Egg
1 Egg yolk
25 grams Pastry flour
25 grams Semolina flour
1 tablespoon Sugar
1 pinch Salt
Pastry flour (for working the dough)
Butter (For cooking)

Preparation steps

For the potato noodles, rinse the potatoes, cover with water and cook for 25 minutes. Drain, cool and peel. Press through a potato ricer and mix with quark, sugar, flour, semolina, egg, egg yolk and salt to make a smooth dough. Cut into 1-1 1/2 cm (approximately 1/2 inch) long, thin pieces. Dust with flour and rest.

For the stewed plums, rinse the plums, cut in half, remove the pits and place in a saucepan with the cinnamon stick. Heat for 2-3 minutes. Simmer and season with vanilla sugar, set aside and let cool.

Bring salted water to a boil, add the potato noodles in portions and simmer for 2 minutes at medium heat. Remove the noodles with a slotted spoon, and drain briefly.

Melt butter in a hot pan, add the potato noodles and cook until golden brown and crisp. Serve on warm plates with stewed plums.
