1 kilogram starchy potatoes

100 grams Italian Salami
3 Anchovy fillet
250 grams Mozzarella
200 grams Provolone cheese
1 handful parsley
80 grams butter
3 eggs
5 tablespoons milk
80 grams grated Parmesan
freshly ground peppers

2 tablespoons breadcrumbs
20 grams butter

Preparation steps

1.

Scrub potatoes and cook in salted water for about 30 minutes. Drain and let cool slightly, peel and press through the ricer. Cut salami into small cubes. Drain anchovies and chop. Cut both cheeses into slices. Rinse parsley, shake dry, pluck off leaves and chop.

Mix potatoes with salami, parsley, anchovies, butter cut into pieces, eggs, milk and Parmesan, whisk until smooth and season with salt and pepper. Butter large baking pan.

Spread one third of potato mixture in the pan and top with half of cheese slices. Spread with another third of potatoes and top with remaining cheese. Spread remaining potatoes and sprinkle with breadcrumbs and dollops of butter. Bake in preheated oven at 180°C (approximately 350°F) for about 40 minutes or until golden brown. Remove from oven and serve.
