1 yellow Bell pepper
7 ounces Celery root (substitute with celery stalks)
28 ounces festive potatoes
2 red onions
1 garlic (clove)
1 tablespoon Canola oil
1 tablespoon Tomato paste
9 fluid ounces Vegetable broth
14 ounces chunky tomatoes (can)
1 tablespoon ground paprika (sweet)
1 teaspoon marjoram (dried)
salt (kosher)
Black pepper (freshly ground)
½ bunch parsley (2 teaspoons)
4 tablespoons Yogurt (3.5% fat)

Preparation steps

Wash the peppers, halve, core and cut into cubes. Peel and dice the celeriac (or celery stalks) and potatoes. Peel and finely chop onions and garlic.

Heat oil in a large pot. Sauté onions over medium heat for 4 minutes. Add garlic, potatoes, celery and tomato paste and fry for 3-4 minutes. De-glaze with vegetable stock and chunky tomatoes. Add spices and simmer covered goulash over medium heat for about 30 minutes.

Add the peppers to the potato goulash and cook for 5 minutes. Wash parsley, shake dry and chop coarsely. Season goulash to taste with salt and pepper and serve with 1 tbsp. yogurt and parsley.
