1 kilogram starchy potatoes
100 grams Pastry flour
2 eggs

1 shallot
1 Tbsp butter
125 grams Bacon (smoked, finely diced)
250 grams mixed Ground meat
2 Tbsps breadcrumbs

Preparation steps

Peel potatoes, rinse, cut into small pieces and cook in boiling salted water for 25 minutes. Drain and let excess water evaporate. While still hot, press through a ricer into a bowl. Add flour and eggs and knead into a smooth dough. Season with salt and pepper. Peel shallots, finely chop and saute in hot butter. Mix bacon with ground meat and breadcrumbs. Season with salt and pepper. Divide dough into tennis ball sized portions. Stuff each portion with the meat mixture, roll to seal and form into a smooth dumpling.

Bring 3 liters (approximately 12 cups) of salted water to a boil and drop in dumplings. Cook for about 20 minutes over low heat. Remove dumplings, drain and serve with salad if desired.
