Preparation steps

Rinse and scrub potatoes and simmer in salted water until tender, about 20 minutes. Drain, peel and let cool.

Meanwhile, peel onions and cut into 5 mm (approximately 1/4-inch) cubes. Blanch for 1 minute in boiling salted water. Drain and rinse with cold water.

Rinse and quarter peppers, remove seeds and cut into 5 mm (approximately 1/4-inch) cubes.

Cut potatoes and smoked salmon into 1 cm (approximately 3/8-inch) cubes. Rinse chives, shake dry and finely chop.

Juice lemon. In a bowl, mix together horseradish, cream cheese and milk. Season with lemon juice, salt and pepper.

Heat oil in a non-stick skillet over medium heat. Add potatoes and cook until golden brown, about 10 minutes. Add peppers and onions and cook, stirring occasionally, until lightly browned, an additional 7-8 minutes.

Add salmon and butter to skillet and cook until salmon is warmed through. Season with salt, pepper and a squeeze of lemon juice. Garnish with horseradish-cream and chives.
