Pork Tenderloin with Plum Gravy
Peel the onion and garlic and chop very finely. Place the pork into a plastic bag with the salt, pepper, curry and plums. Wrap securely with kitchen string and rub the spices into the meat. Move the pork and plums to a roasting pan along with the onions, garlic and cinnamon stick. Add the wine and broth and place the pan in a preheated oven at 180°C (approximately 350°F) for about 90 minutes, basting occasionally.
Remove the finished roast and let it rest for a few minutes before slicing. Remove the plums from the broth and set aside. Pour the gravy into a pot, add the cream and boil for about 5 minutes, then season with salt and pepper as needed, and puree everything together. Serve the roasted, sliced pork with the plums and a little sauce. Garnish with parsley.
