Pork Steaks with Morels
Rinse morels thoroughly and soak in port wine.
Season steaks with salt and pepper and pound until slightly flattened. In a pan, sear steaks in hot oil and butter, 2-3 minutes per side. Season again with salt and pepper, wrap in aluminum foil and keep warm.
Deglaze pan drippings with port wine. Add morels and simmer about 5 minutes. Stir in double cream and cook until slightly reduced. Season with salt and pepper and stir in any juices from steaks.
Meanwhile, cook tagliatelle in boiling salted water until al dente.
Divide sauce among plates and serve with ham, tagliatelle and pork steaks.
