Pork Steaks with Apricot Sauce
Blanch apricots in boiling water, rinse in cold water and peel. Halve and pit, cut into wedges. Peel ginger and chop finely. Rinse and dry scallions, cut into rings.
Rinse pork chops and pat dry. Heat 2 tablespoons of oil in a pan and cook steaks for about 2-3 minutes per side (if meat is thick, little longer). Season with salt and pepper. Wrap in aluminum foil and keep warm in preheated oven at 60°C (approximately 150°F).
Add the rest of oil to the pan and saute scallions and ginger briefly. Add apricots and sprinkle with sugar, caramelize lightly. Add wine to the pan and boil for 3-4 minutes on high heat. Season with salt and cayenne pepper.
Arrange steaks on plates and drizzle with sauce. Season with coarsely ground pepper and serve with baguette.
