Even smarter

Classic pork pies are prepared with puff pastry - but there is a smarter way: instead, a short pastry with wholemeal flour ensures carefree enjoyment. For the wholemeal flour, the whole grain is ground with all its components, including the germ and the outer layers. This provides extra protein, vitamins, fibre and minerals.

You can also prepare the meat pies completely with beef - this saves arachidonic acid. This fatty acid can increase inflammation and is found in pork.

Preparation steps

For the dough, sift flour into a bowl and create a well in the center. Add butter in small pieces around well. Add salt, egg and 2 tablespoons of water to well. Knead quickly, shape into a ball, wrap in plastic wrap and chill for 2 hours.

For the filling, soak bread in lukewarm water. Process pork, fatty bacon and smoked bacon through a meat grinder. Peel shallots and garlic and finely chop. Mix with expressed bread and egg. Season with salt, pepper and pie spice. Add to meat and mix well.

Roll out about 2/3 of dough until 4 mm thick. Divide into 12 portions and press into buttered muffin wells. Top with meat mixture. Roll out remaining dough and use to seal filling. Brush patties with egg yolk and cut a hole in the center of each patty.

Bake in a preheated oven at 180°C (approximately 350°F) for 45 minutes. Remove and serve lukewarm.
