Preheat the oven to 170 ° C convection preheat.

Rinse meat, pat dry and season with salt and pepper. Rinse tomatoes and drain olives. Peel shallots and garlic, chop finely. Rinse thyme, shake dry, pluck off leaves and chop finely.
