8 thinly sliced Pork belly (400 grams or 14.1 ounces)
8 small Veal cutlets (400 grams or 14.1 ounces)
1 shallot
6 tablespoons olive oil
100 milliliters dry white wine
250 grams lumpy tomatoes
salt
freshly ground peppers
1 garlic clove
2 tablespoons finely chopped Fresh herbs (basil, parsley, rosemary)
rosemary (for garnish)

Preparation steps

Peel carrots and celery and cut into 6 cm (approximately 2 1/4 inch) long sticks.

Place pork belly slices on work surface and top with flattened veal. add a piece of carrot and celery to each, roll up and secure with wooden skewers. Peel and mince shallots. Heat 2 tablespoons oil in a pan and cook shallots. Deglaze with white wine. Add meat to the pan. Add tomatoes and season with salt and pepper Simmer for about 15 minutes, turning meat occasionally.

Peel and mince garlic. Combine with herbs and remaining oil.

Remove meat from pan and remove skewers. Drizzle with tomato sauce and herb oil. Serve garnished with rosemary.
