Heat the oven to to 220°C (200°C in a fan oven) 425°F, gas 7 and line a baking tray with grease-proof paper.
Sprinkle the Parmesan onto the prepared baking tray in circles approx. 3-4 cm in diameter. Bake for 3-4 min until the cheese is golden brown. Remove from the oven and leave to cool. Turn the temperature down to 200°C (180°C in a fan oven) 400°F, gas 6.
Toast the baguette slices and then rub with the garlic. Top with the Vacherin and return to the oven for another 3-4 min. Remove from the oven and top with the Parmesan and the bacon. Serve garnished with ground black pepper.
