300 grams Whole wheat flour
1 cube fresh Yeast (42 gram or 1.5 ounces)
1 tablespoon sugar
200 grams lukewarm milk
1 pinch salt
50 grams softened butter
For the topping
100 grams ground Hazelnuts
100 grams brown cane sugar
1 teaspoon cinnamon
1 packet Vanilla sugar
100 grams butter
1 tablespoon melted honey
250 milliliters milk
2 eggs
250 grams ground Poppy seeds
For the streusel
15 grams Whole wheat flour
50 grams brown cane sugar
50 grams ground Hazelnuts
50 grams butter
For preparing
butter (for greasing)
Pastry flour (for dusting)

Preparation steps

For the dough: Dissolve yeast and sugar in milk.

Put flour, butter and salt in a bowl, pour in yeast milk and knead to form an elastic dough. Cover and let rest in a warm place for 45 minutes.

For the topping: Toast hazelnuts in a dry pan. Oce fragrant, add sugar, cinnamon and vanilla sugar. Stir in butter and honey until butter has melted. Deglaze with milk and stir in poppy seeds. Boil for 1 minute. Remove from heat and let cool for about 30 minutes, stirring occasionally. Then stir in eggs, one by one.

Knead dough on a floured surface and roll out to about the size of the baking sheet. Spread topping onto dough and smooth.

For the streusel: Combine flour, sugar, hazelnuts and butter with a pastry cutter. Sprinkle onto topping and bake in an oven preheated to 180°C (approximately 350°F) for 35-40 minutes. Remove, let cool, slice and serve.
