250 grams Pastry flour
20 grams fresh Yeast
1 tablespoon sugar
6 tablespoons milk
½ untreated lemon (zested)
4 tablespoons Plum butter
4 tablespoons butter
50 grams ground Poppy seeds
2 tablespoons powdered sugar

Preparation steps

Place flour into a bowl and make a well in the middle. Crumble in the yeast and add a little lukewarm milk and sugar. Mix in a little of the flour, cover and allow to rise for 15 minutes in a warm place. Mix egg with remaining milk, add to the dough and knead quickly. Cover and let rise another 30 minutes. Divide the dough into 4 equal pieces and flatten each piece. Place 1 tablespoon plum jam in the center of each, pinch together edges to form dumplings and let rise another 20 minutes. Bring salted water to a boil in a large pot. Drop dumplings into the simmering water (they should not touch) and cook 12 minutes over low heat. Do not boil. Turn dumplings gently after half the cooking time.

Melt butter in a pan. Mix together poppy seeds and powdered sugar. Remove the finished dumplings with a slotted spoon, drain well, spread on plates and top with hot butter. Sprinkle with poppy seed mixture and serve.
