Ingredients

For the dough
200 grams Pastry flour
100 grams butter
80 grams sugar
1 egg
1 tablespoon Whipped cream (as needed)
For the filling
500 milliliters milk
150 grams Semolina
2 tablespoons Whipped cream
250 grams ground Poppy seeds
sugar (to taste)
2 eggs
2 packages Vanilla sugar

Preparation steps

For the dough: Combine all ingredients, except cream, in a bowl and knead into a smooth dough. Add cream if dough is too firm.

Thinly roll out dough on a floured surface and press into a 28 cm (approximately 11 inch) springform pan. Chill.

For the filling: Boil milk and stir in semolina. Separate eggs and beat yolks with half the sugar until creamy, then stir in poppy seeds. Beat egg whites until stiff and beat in remaining sugar until mixture is glossy. Fold poppy mixture into semolina mixture, then fold in egg whites.

Pour filling into dough and bake in an oven preheated to 160°C (approximately 325°F) for at least 50 minutes. Remove from oven and let cool. Release from pan and let cool on a wire rack. Serve dusted with powdered sugar.
