For the dough
350 grams Pastry flour
40 grams sugar
2 Tbsps Vanilla sugar
½ cube Yeast (21 grams)
150 milliliters lukewarm milk
100 grams soft butter
3 egg yolks
2 Tbsps Rum
2 tsps grated Orange peel
Pastry flour (for dusting)
For brushing
1 egg
For the topping
125 grams powdered sugar
1 Tbsp Orange juice
1 Tbsp Poppy seeds

Preparation steps

For the filling, melt butter in a saucepan and stir in poppy seeds, sugar and honey. Simmer filling mixture until mixture clings together, about 5 minutes. Transfer filling mixture to a bowl, let cool and mix in raisins and almonds.

Beat egg white until stiff, fold into filling mixture, cover and refrigerate for about 1 hour.

For the pastry, sift flour into a bowl, stir in sugar and vanilla sugar and make a well in the center.

Crumble yeast in milk, let dissolve, add to well in flour and sprinkle with a little flour from the edge. Cover bowl and let stand in a warm place for about 15 minutes. Mix butter, egg yolks, rum and orange peel and knead into flour mixture to a dough. Knead well until dough is elastic and pulls away from the bowl, about 10 minutes. Cover dough and let rise for about 45 minutes. Line a baking sheet with parchment paper and preheat oven to 180°C (approximately 350°F).

Roll out dough on a floured surface to a rectangle about 25 x 40 cm (approximately 10 x 16 inches). Spread filling over dough, leaving a margin of about 1.5 cm (approximately 1/2 inch) around the edges. Roll up dough from two sides towards center. Set strudel seam-side down on prepared baking sheet, cover and let rise for about 20 minutes. Beat egg and brush over strudel. Bake strudel for 35-40 minutes and cool on a wire rack.

For the topping, mix powdered sugar and orange juice until smooth and brush over strudel. Sprinkle strudel with poppy seeds and sugar pearls and let dry. Cut strudel into slices and serve on a festive plate.
