500 grams Pastry flour
½ cube fresh Yeast (21 grams) (approximately 3/4 ounce)
60 grams sugar
150 milliliters lukewarm milk
100 grams butter
2 egg yolks
1 egg
1 generous pinch Lemon peel

For the filling
300 grams ground Poppy seeds
250 milliliters milk
40 grams butter
120 grams sugar
1 pinch cinnamon
To finish
1 egg yolk
200 grams powdered sugar
2 Tbsps lemon juice
60 grams diced, dried Apricot

Preparation steps

For the dough: Place the flour in a bowl, make a well in the center, crumble in the yeast and mix in 2 tablespoons sugar and 50 ml (approximately 1/4 cup) lukewarm milk. Cover and let rise for about 30 minutes in a warm place. Add the remaining ingredients and knead until smooth and the dough comes away from the sides of the bowl. Cover and let rise for another 30 minutes.

For the filling: Bring the ground poppy seeds, milk, butter and sugar to a boil. Remove from the heat and add the cinnamon. Let cool, stirring occasionally.

Knead the dough again and roll out into a rectangle about 1 cm (approximately 1/3 inch) thick. Spread the filling over top and roll up. Place on a baking sheet lined with parchment paper and let rise for another 30 minutes.

Preheat the oven to 180°C (approximately 350°F) convection.

Whisk the egg yolk with 1-2 tablespoons water. Brush over the strudel and bake for 45-55 minutes, until golden brown. Remove from the oven and let cool. For the topping: Mix the powdered sugar with lemon juice until thick, spread over the strudel then sprinkle with apricots. Serve sliced.
