Apricots are a good source of vitamin A, we need this for a well functioning visual process and for beautiful skin. Contained secondary plant substances protect our body cells from free radicals and can thus counteract the development of cancer cells. The coconut flakes shine with B vitamins, especially the high content of biotin (vitamin B7), which makes our nails firm, hair shiny and skin beautiful.

If you don't like apricots, you can replace them with other dried fruits such as plums. If you want to save a little sugar and calories, you can leave out the marzipan layer without substitution.

Preparation steps

1.

Preheat oven to 180 ° (approximately 350 ° F).

Place apricots in apple juice.

For the base, mix butter, sugar and lemon zest until creamy. Gradually add the eggs. Mix the flour, cocoa and baking powder together and add to butter mixture, alternating with milk. Drain apricots, chop and mix into batter along with poppy seeds.

Spread half the batter in baking tray and pre-bake for about 10 minutes.

Remove and cool.

Knead marzipan with powdered sugar and orange liqueur between 2 layers of plastic wrap. Roll thinly and cut into wide strips. Place on cake base.

Separate eggs and mix yolks with quark, cream cheese, liqueur, sugar, lemon juice and vanilla pudding mix. Beat egg whites with a pinch of salt until stiff and fold into yolk mixture. Spread over marzipan and bake for about 40 minutes. Cake is done when inserted toothpick comes out clean.

Remove cake, cool and sprinkle with coconut flakes.
