60 grams sugar

400 milliliters Apple juice
2 Tbsps Grenadine
12 centiliters Rum
1 Cinnamon stick
1 organic lemon

Preparation steps

Cook sugar in a saucepan until caramelized and golden. Remove from heat. Use a fork to quickly pull thin threads from the sugar, and transfer to a piece of parchment paper. Repeat process until carmelized sugar is used up. Let spun sugar threads cool until hardened.

Halve pomegranate and remove seeds. Divide pomegranate seeds among four glasses. In a saucepan, combine apple juice, pomegranate syrup, rum, 200 ml (approximately a scant cup) water, and cinnamon stick. Heat over low heat. Rinse lemon, finely grate some of the zest, and squeeze juice. Add zest and juice to pan and let cook over low heat, about 15 minutes (do not let boil).  Strain mixture through a sieve and divide among glasses. Remove spun sugar carefully from parchment paper and use as a decorative garnish.
