1 ¾ cups all-purpose flour
3 egg yolks
3 tablespoons cream
1 teaspoon Baking powder
2 tablespoons Rum
all-purpose flour (for working the dough)
clarified butter (for deep frying)
powdered sugar (for dusting)

Preparation steps

Knead together the sieved flour, egg yolks, cream, baking powder, rum and a pinch of salt to form a smooth, firm dough. Roll out thinly on a floured surface and cut into strips (approx. 3x12 cm) using a pastry wheel.

Slit each strip in the middle lengthways then pull one end of the dough through the slit to form a loop.

Heat the clarified butter to approx. 170°C (340°F). Fry the doughnuts in batches for 2-3 minutes until golden brown. Drain on kitchen paper and serve dusted with icing sugar.
