¼ cup Brandy (or rum)
1 teaspoon vanilla extract
¼ teaspoon salt
¼ cup powdered sugar (plus extra for coating)
2 cups all-purpose flour (plus extra for dusting)
vegetable oil (for deep frying)

Preparation steps

1.
Beat together the egg yolks, egg, brandy, vanilla and salt until blended.

Gradually add the icing sugar and beat until smooth. Stir in the flour until a stiff dough forms. Turn onto a lightly floured surface and knead until smooth.

Divide the dough into 3 portions. Roll one portion into a 5mm|1/4" thick rectangle, about 30cm x 14cm| 12" x 5-1/2".

Cut in half lengthwise, then cut the dough widthwise into3cm| 1 1/2" wide strips. Cut a lengthwise slit down the centre of each strip. Fold one end of the rectangle through the slit to make a ribbon-like shape. Pull the edges so the ribbon is thin. Repeat with the remaining dough.

Heat the oil in a deep heavy-based pan or fryer.
6.
Fry a few at a time, for 1-2 minutes on each side, until golden. Drain on absorbent kitchen paper. Sift icing sugar over the top.
