- 200 grams Cornmeal (Instant)
- white peppers
- 50 grams grated Parmesan
- 6 eggs
- 200 grams butter
- 100 grams Pastry flour
- 1 teaspoon baking soda
- ½ pinch Baking powder
- 150 grams coarsely diced Bacon (or meatloaf)
- butter (for greasing the mold)
Sprinkle cornmeal into 500 ml (approximately 2 cups) boiling water and allow to cook. Season with salt and pepper to taste.
Separate eggs and beat yolks with butter until frothy. Add cornmeal, flour, Parmesan, baking soda and baking powder to butter mixture and stir. Beat egg whites with a pinch of salt until stiff and fold into batter.
Grease pan. Distribute bacon in pan, pour in batter and flatten. Bake in preheated oven at 180°C (approximately 350°F) for about 50 - 60 minutes. Cover cake with some aluminum foil as necessary. Loosen cake from mold. Serve hot or cold as desired.
