Poached Strawberries with Pepper
Boil the sugar with the pepper, the liqueur, lemon juice and 250 ml of water. Rinse the strawberries, trim and place in the sauce. Reduce the heat and poach for 2-3 minutes.
Lift with a skimmer from the sauce and let cool. Simmer to reduce the sauce by about half and leave to cool. Serve with the strawberries and serve with ice cream if desired.
