- For the pears
- 1 unwaxed lemon (zest and juice)
- ½ stick cinnamon
- 2 Tbsps sugar
- 4 fresh Pear (e. g. Beurré Hardy, peeled, leaving the stalk)
- For the chocolate sauce
- ⅞ cup whipping cream
- ⅔ cup Dark chocolate (min. 70% cocoa, in pieces)
- ⅔ cup plain Chocolate (approx. 50% cocoa, in pieces)
- 1 tsp Pear brandy (to taste)
Preparation steps

Bring approx. 375 ml water to the boil with the lemon zest and juice, cinnamon and sugar. Add the pears and poach for around 10 minutes until soft. If necessary, turn the pears once during cooking. Once cooked, remove from the liquor, drain and leave to cool.

For the chocolate sauce, bring the whipping cream to the boil. Add the chocolate and mix quickly until the ingredients are combined. Add a little pear brandy to taste, if desired, then leave to cool slightly.

Serve the pears coated in sauce. Dust with a little cocoa if desired.
