1 lemon (juiced and zest grated)
1 Cinnamon stick (about 3-inches)
3 tablespoons sugar
4 Pear (peeled; stems intact)
For Chocolate Sauce
1 cup whipping cream
3 ½ ounces plain semi-sweet chocolate (50% cocoa solids; chopped)

¾ cup whipping cream
1 ½ tablespoons whipped cream stabilizer

Preparation steps

For Pears:

Bring water, lemon zest and juice, cinnamon stick and sugar to a boil. Add the pears to the boiling liquid and simmer gently for about 10 minutes until soft. If necessary turn the pears once during cooking. Remove the fruit from the liquid, drain and allow to cool.

For Chocolate Sauce:

Bring the whipping cream to a gentle boil. Remove from heat source and add the chocolate; stir together briefly until the ingredients are thoroughly mixed and the chocolate is melted.

For Whipped Cream:

Whip the cream, stabilizer and vanilla until firm. Spoon whipped cream into a pastry bag fitted with a star-shaped nozzle.

Pipe a rosette of cream into the bottom of each dessert glass, place a pear on top and drizzle chocolate sauce over the top.
