Ingredients

For pears
200 milliliters dry white wine (Riesling)
4 tablespoons sugar
1 Star anise
½ Cinnamon stick
1 fresh lemon (juiced)
4 ripe Pear (such as Williams Christ)
In addition
200 grams Milk chocolate couveture
70 milliliters Whipped cream
2 tablespoons Pistachio

Preparation steps

Combine white wine with about 200 ml (approximately 3/4 cup) of water, sugar, spices and lemon juice and bring to a boil. Peel and core pears with an apple corer. Add pears to wine mixture so that they are completely covered with liquid. Bring to a boil and remove from heat (if pears are large, simmer a little bit). Cover and let cool.

Chop chocolate coarsely. Bring cream to boil, remove from heat and melt chocolate in it. Remove pears from liquid and drain well. Place pears into bowls and drizzle with chocolate sauce. Sprinkle with pistashios and serve.
