Poached Peaches in Spiced Port Wine
Caramelize sugar in a saucepan. Deglaze with port wine and red wine and bring to a boil. Rinse peaches and prick each several times with a fork. Place in pan, along with anise, cinnamon stick and vanilla bean (slit lengthwise). Simmer over low heat, about 10 minutes (do not boil). Remove from heat. Let peaches cool in pan.
Before serving, remove skins from peaches. Serve at room temperature, with ice cream, if desired.
