Preparation steps

1.

Rinse the plums, halve, and remove the seeds. Simmer gently with the sugar and white wine for about 15 minutes.

Mix the milk and cream in a bowl and set over a hot water bath. Whisk the honey and egg yolks into the cream and whisk until airy and thickened slightly.

Remove the plums from the cooking liquid and divide into glasses. Pour the honey sauce over them and serve immediately.
