200 grams Pastry flour
50 grams sugar
400 milliliters milk
salt

600 grams Plum
butter (for cooking)
powdered sugar (for dusting)

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F).

For the pancakes: Separate the egg. Whisk the egg yolks with the flour, sugar and milk until smooth. Whip the egg whites with a pinch of salt until stiff and fold in.

Rinse the plums, halve, pit and cut into quarters. 

4.

In an ovenproof pan, melt a little butter then add a small ladleful of batter and gently rotate and tilt the pan. Arrange some plum halves on top, dust with powdered sugar and transfer to the oven to bake for about 5 minutes. 

5.

Repeat with the remaining batter and plums.

6.

Serve drizzled with maple syrup.
